About
Soft Bar + Cafe is a bar with no alcohol behind it, which is the whole design rather than a limitation. Radke's own distinction is that the room does not serve mocktails: "we make soft cocktails", built as premium drinks in their own right, some modelled on an espresso martini or an Aperol spritz, one bitter negroni-style pour called Bitter Beginnings, several using electrolytes, vitamins, amino acids or collagen. The kitchen runs flatbreads, meats, cheeses and pastries alongside coffee, tea and matcha, and the doors open at 7am so the same room works as a cafe and as a night out.
The space is a 2,300-square-foot former industrial garage near the corner of Banker and Dobbin streets in Greenpoint. Not holding a liquor licence gave Radke room to negotiate on real estate that a bar would not have had.
Carl Radke founded it. He ran sales and business development at the canned-cocktail brand Loverboy, becoming its VP of sales, and has appeared on Bravo's Summer House for nine seasons. He lives in Greenpoint and has built the business around local food, fitness and wellness partners. He joined a TechTO Retail fireside in September 2020, then still at Loverboy.
